Today, I am going to show you how to make an amazing bread pudding with big cubes of rich brioche bread completely saturated by delicate sweet custard. Let’s get started!
The Ingredients you’ll need:
Brioche (Stale bread)
3 Eggs
1 tbsp Vanilla Extract
½ cup of Granulated Sugar
3 tbsp of Unsalted Butter
½ tsp of Salt
2 cups of Milk
How to make the Bread Pudding
1. Cut the bread into roughly one inch pieces. They don’t all have to be exactly the same size at all. If you are using fresh bread instead of stale, then you have to remove some of the moisture. Give it a quick toast in the oven at 250F for about 10 minutes. Keep eye on it so it doesn’t singe.

2. While waiting for the bread, we are gonna make a simple custard. Put sugar, butter, salt and milk into a sauce pan. Mix it up for abit, then place it over medium heat and just scald it. We want it to be almost getting to bubbling. When it starts bubbling, take off from the heat. Let it cool down for just a couple minutes. Set it aside before we add the eggs and vanilla later.
3. In the meantime, get the bread out from the oven (it should be nice and crisp now). Grease the baking dish. Add the bread in, make sure you have less gaps on the bottom. Set aside.
4. Go back to our milk mixture, add in vanilla extract. While whisk it, pour the eggs slowly.

5. Reserve 1/3 cup of the custard, and pour the rest into the baking dish. Make sure there is no dry piece lurking around on top. Push down some of the bread, so there is no air gasp. Pour the reserved cup on top of it.
6. Bread pudding is ready to go into the oven at 350F for about 40 to 50 minutes.
7. Ready to serve!
